About this wine
Vineyard and terroir
The fruit comes from Cerrete, a separate high-altitude vineyard in a distinctive part of Montefalco.
Vinification
The must remains in contact with the skins and seeds for 32 days. Fermentation begins spontaneously with the estate’s native yeasts, without temperature control or added substances. The wine is bottled unfiltered, with only a very small addition of sulfites.
Ageing
The wine rests for 11 months in stainless-steel tanks, followed by 32 months in large Slavonian oak casks.
