I Privilegi di Famiglia: l’affinamento del vino

Maturation begins after fermentation and may take place in steel, wood or bottle. During this period, alcohol, acidity, extract and tannins integrate; aromas progress from primary to secondary and tertiary forms; and the palate acquires greater stability and harmony.

Bottle maturation is central to Privilegio di Famiglia. In a reductive environment without oxygen, selected wines undergo a slow transformation for five years before release. The program retains only small quantities: 5,000 bottles of I Frati and 4,000 each of Brolettino and Ronchedone in a recent release.

The project expresses a deliberate choice to wait until the wines display greater complexity and equilibrium. Brolettino’s approximately eight months in new French oak precede the five-year bottle period, while the white and red wines follow distinct evolutionary paths.
