Longevity is defined as the ability to evolve while retaining balance, rather than mere survival in bottle. Acidity, structure, extract and, for red wines, tannin allow aromas to progress from primary fruit and flower notes through fermentation-derived notes to tertiary expressions.

Bottle-aged wine needs time after opening because exposure to air allows its layered aromas to emerge. This is especially relevant to wines bottled in the absence of oxygen. After five years, I Frati develops broader honeyed, almond and mature-fruit dimensions while preserving freshness and savouriness; Brolettino integrates its French-oak structure into a softer, deeper texture; Ronchedone develops finer tannins and mature-fruit, spice, cocoa, tobacco and balsamic nuances.

The common principle is that time transforms the wine without erasing its identity.
