During summer days, vines capture sunlight and berries accumulate the components needed for ripening. At night, lower temperatures slow vine metabolism and restore balance after daytime heat. In Lugana, the day–night shift helps preserve freshness and supports gradual aromatic development.

Lake Garda moderates extremes, while breezes moving through the vineyards help maintain an even environment. The ripening process advances incrementally: berry texture changes, aromas become more defined and the harvest date is approached through repeated observation rather than force.

Night also reveals the vineyard’s biodiversity. Small animals, insects and soil organisms remain active and contribute to the living ecosystem. Harvest is therefore presented as the result of a long sequence of warm days, cool nights and attentive decisions rather than a single event.
