About this wine
Vineyard and terroir
Edizione R.S. 39 draws on 149 certified-organic plots. Its 125 Chardonnay plots, averaging 21 years of age, lie in Erbusco, Adro, Cazzago San Martino, Corte Franca, Iseo and Passirano. Three Pinot Blanc plots in Passirano average 28 years, while 21 Pinot Noir plots, averaging 21 years, are distributed across Erbusco, Provaglio d’Iseo and Passirano.
Grapes
Blend proportions vary by vintage. Latest published composition: 82% Chardonnay, 11% Pinot Noir, 7% Pinot Blanc (Edizione R.S. 39).
Vinification
Grapes are harvested by hand into small crates, graded and chilled. Every bunch is selected, washed through three soaking tanks and dried in a dedicated tunnel. Pressing takes place without oxygen. The base musts ferment in temperature-controlled stainless-steel tanks and remain there until the following March. Seven additional months allow the separate wines to settle and mature before assembly.
Tirage for Edizione R.S. 39 took place between April and June 2015. Disgorgement is performed without oxygen using a proprietary patented process intended to prevent oxidative shock and avoid adding sulphites at this stage. Each bottle receives a unique traceability code.
Ageing
The R.S.—“Recentemente Sboccato,” or recently disgorged—designation requires at least 10 years on the lees. Edizione R.S. 39 matured on its lees for 10 years and four months.
Technical data
Alcohol is 12.5% vol., pH 3.16, total acidity 5.30 g/L and volatile acidity 0.30 g/L. The technical sheet records a disgorgement dosage of 0.8 g/L and classifies the wine as Extra Brut. Total sulphur dioxide is 56 mg/L.
Vintage notes
The cuvée is led by the 2014 vintage. An unusually mild winter advanced the growth cycle by about ten days, and favourable weather through May and mid-June encouraged rapid development. From late June, Atlantic weather brought repeated instability: more than 400 mm of rain fell in July and August, with persistently cool temperatures. Harvest began on 14 August with Pinot Noir, followed by Chardonnay. Chardonnay retained sufficient resilience to produce taut, intact base wines. The 2014 yield was 8,500 kg/ha, equivalent to 5,360 L/ha and a grape-to-wine yield of 63%.
Label / history
The R.S. project began in 2020 with a five-edition vertical spanning numbers 34 to 30; number 30 corresponded to the first Cuvée Prestige marketed in 2007. These bottles were disgorged in summer 2020 after between 10 and 15 years on their lees. A new R.S. edition has been released annually since 2021. The initials on the label mean “Recentemente Sboccato,” identifying a recently disgorged wine retained on its lees for extended ageing.
