About this wine
Vineyard and terroir
The wine draws on selected Garganega grapes from several vineyards across the commune of Monteforte d’Alpone. The soils are volcanic and rich in mineral substances. Yield is 125 quintals per hectare.
Grapes
100% Garganega.
Vinification
Harvest takes place at the end of September. The grapes then dry for 3–4 months, suspended on special strings known as picai to improve ventilation. After pressing, the first fermentation occurs in wooden vats with exposure to air. This brings natural oxidation of the must and the formation of an indigenous surface flora called telarina. The must is subsequently transferred to small wooden barrels to complete fermentation; the bungholes are sealed with cement.
Ageing
The wine evolves and matures in the sealed wooden barrels for six years.
Technical data
Veneto Bianco Passito IGT. The selected technical sheet gives approximately 13% alcohol, while the product page gives approximately 12.5%. Production is about 500 bottles in 375 ml and 1,500 ml formats.
Tasting profile
Amber in colour, with a broad aromatic range spanning raisins, candied fruit, tobacco and mineral nuances. The palate is dense and balanced: acidity offsets the residual sweetness and carries the wine into a long, elegant finish.
Serving and pairing
Serve initially at 10°C. Pair with blue cheese, serve after a meal or enjoy as a meditation wine.
