About this wine
Vineyard and terroir
The Garganega comes from selected Ca’ Rugate vineyards in Tremenalto, Monteforte d’Alpone. The soils are volcanic and rich in minerals. Yield is 80 quintals per hectare.
Grapes
100% Garganega.
Vinification
The bunches are harvested by hand during the final two weeks of September and arranged flat in small wooden boxes holding about 6 kg, allowing air to circulate during the drying period. The grapes dry gently in ventilated rooms for approximately 6–7 months, concentrating sweetness and flavour. In spring they are pressed and fermented in barrel with natural yeast.
Ageing
The wine matures in wood for 10–12 months. It shows at its best after at least one further year in bottle.
Technical data
Recioto di Soave DOCG. Approximately 13.5% alcohol by volume. Production is about 10,000 bottles, offered in 500 ml, 1,500 ml and 3,000 ml formats.
Tasting profile
Bright golden colour. The intense floral perfume is joined by sultanas, dried figs, nuts and spice. The palate is richly sweet and persistent.
Serving and pairing
Serve initially at 10°C. Pair with cakes and pastries, blue-veined cheeses or foie gras. It can also be served after a meal as a meditation wine.
