About this wine
Vineyard and terroir
The grapes are grown in the province of Salento, in vineyards near the village of Guagnanoo. The Salento peninsula lies between the Adriatic and Ionian seas; its mild climate and fresh sea air aid ripening, while its soils are particularly suited to viticulture.
Vinification
The grapes are harvested in mid-September. After pressing, the juice remains in contact with the skins for about one day at 5–8°C, promoting typical Fiano aromas while limiting tannin extraction. Fermentation takes place in stainless-steel tanks at 14°C.
Ageing
The wine rests on its lees in stainless-steel tanks for four months.

Label / history
Cantele was founded in the 1950s, when wine merchant Giovanni Battista Cantele and Teresa Manara established a winery in Salento, Puglia. Their sons joined the family business in 1979 after studying at the Conegliano Viticulture Research Center, and a new winery opened in 2003. The estate is now run by Umberto Cantele with his cousins and sister. The family owns 50 hectares of vineyards and manages a further 150 hectares for other growers, with annual production of about two million bottles.
