About this wine
Vineyard and terroir
The grapes grow in Cantele vineyards near the villages of Guagnano, Sava and San Pietro Vernotico. The Salento peninsula lies between the Adriatic and Ionian seas, whose fresh air and the area's mild climate aid ripening.
Vinification
The grapes are harvested in late September, processed and pressed. The juice is chilled and settled before alcoholic fermentation in stainless-steel tanks at 15 °C.
