100% Lambrusco di Sorbara.
Vinification
The finest grapes are harvested strictly by hand in crates and gently pressed. Only the free-run must, selected for its acidity and minerality, undergoes fermentation in temperature-controlled stainless-steel vats. In the spring after harvest, the traditional-method second fermentation begins in bottle at a constant temperature. Following extended maturation, the wine is disgorged and topped up with the same wine, with no added sugar.
Ageing
Minimum 36 months on the lees.
Technical data
Rosé quality sparkling wine, zero dosage. Alcohol is 12.5% vol. The product page displays the 2016 and 2020 vintages.
Tasting profile
Pale pink. The nose combines fine fruit with floral fragrances. Its velvety, soft and fruity opening develops with finesse, freshness and a gradually unfolding aromatic profile. The wine is long and thirst-quenching, finishing cleanly with evolving citrus and mineral notes.
Serving and pairing
Serve at 8–10°C.
