About this wine

Vineyard and terroir

Refosco dal Peduncolo Rosso grown in Friuli-Venezia Giulia. The vines are trained to lateral Guyot. The regional growing area lies between the Alpine foothills and the Adriatic Sea, whose influences moderate the climate.

Grapes

100% Refosco dal Peduncolo Rosso.

Vinification

The grapes are destemmed, and maceration and fermentation proceed for about 15 days. After pressing, the wine settles before being racked into stainless-steel tanks for natural malolactic fermentation, converting sharper malic acid into softer lactic acid.

Ageing

The wine matures for 24 months in American-oak barriques. It is subsequently rested in bottle for at least 2–3 months before release. Technological DIAM composite corks are used.

Alcohol: 13%. Annual production: approximately 6,000 bottles. First vintage: 2020.

Tasting profile

A full, enveloping bouquet combines characteristic strawberry, wild blackberry and woodland-fruit aromas with the warmer notes imparted by American oak. The style retains freshness and an approachable character.

Serving and pairing

Serve at 18–20 °C. Pair with pork—particularly succulent, fattier cuts such as ribs or loin—rustic game including venison and hare, and mature or robust cheeses. Suitable cheeses include Parmigiano Reggiano, Cimbro, Monte Veronese Ubriaco, Pecorino Vecchio, Gouda, Gorgonzola, Stilton, Roquefort and Brie-style cheeses.
