A discussion with consulting oenologist Marco Giulioli then explored his minimal-extraction method for Aglianico: fewer punch-downs and pump-overs, changing maceration periods according to repeated tasting, and the possibility of removing skins before fermentation finishes. One trial even involved removing the skins temporarily and returning only a smaller portion to achieve the desired balance.
