Fermentation takes place in wooden barrels and stainless-steel tanks, followed by malolactic fermentation.

Ageing

The wine matures in oak barrels for approximately 20–24 months.

Tasting profile

Rich in character.

Label / history

Its motto is “... ma solo la quiete del Portico mette le ali al pensiero,” translated as “In the peace beneath the portico, thoughts of wine come to mind.” Enrico Fossi names each wine and creates an individual label using sayings, quotations and aphorisms that reflect its story and character.
