Vineyard and terroir
The Catarratto comes from the estate’s hillside vineyards in the province of Trapani.
Vinification
Harvest takes place from mid to late September. The grapes are gently pressed and fermented for 20 days at a controlled temperature of 16–18 °C.

Salvatore Di Gaetano founded Firriato in 1985 in the ancient town of Erice, near Trapani. The estate subsequently expanded through the acquisition of new farms and continued improvements to its winemaking techniques and equipment.
