About this wine
Vineyard and terroir
The organically grown fruit comes from the Borgo Guarini estate in the commune of Trapani. The vineyards occupy southwest-facing hills at 350 m above sea level, on clay and loam soils.
Vinification
The grapes are harvested by hand from late August to early September. Alcoholic fermentation takes place in stainless-steel tanks at a controlled temperature of 16–18 °C.
Ageing
The wine rests on its lees in stainless-steel vats for three months, with daily stirring, followed by two months in bottle.
Label / history
Caeles is a range of certified organic and vegan wines. Firriato was founded in 1985 by Salvatore Di Gaetano in Erice, near Trapani.
