About this wine
Vineyard and terroir
The organically grown fruit comes from hillside vineyards at the Borgo Guarini estate in the commune of Trapani. The sites lie at 250 m, face south and southwest, and have clay soils containing limestone.
Vinification
The grapes are harvested by hand in the second week of September. Alcoholic fermentation takes place in stainless-steel tanks for eight days at a controlled temperature of 24 °C, followed by malolactic fermentation.
Ageing
The wine matures for three months in second- and third-use French oak barriques, followed by two months in bottle.
Label / history
Caeles is a range of certified organic and vegan wines. Firriato was founded in 1985 by Salvatore Di Gaetano in Erice, near Trapani.
