Vineyard and terroir
The grapes grow in vineyards in the municipality of Vidor at an altitude of 125 metres.
Vinification
The grapes are harvested by hand at optimum ripeness. Pinot Nero is picked in early September, followed by Glera in late September. The Glera is pressed, statically settled and fermented with selected yeasts at a controlled temperature. The Pinot Nero is destemmed and pressed before cold pre-fermentation maceration and fermentation on the skins in stainless-steel tanks. After blending, the wine is fermented at 10 °C. Secondary fermentation with added yeast lasts at least 60 days.
