About this wine
Vineyard and terroir
The vineyard lies in the Catania area at 430 m elevation, on loamy and clay soils. The soils give body, good structure and mineral notes. Temperature changes bring freshness and balance. The vines are 35 years old and add depth and concentration.
Vinification
The grapes are harvested by hand from late September to early October. They macerate and ferment on their skins for 30 days in upright "tini" vats, without temperature control or selected yeasts. The natural fermentation preserves the untamed character and energy of the terroir.
Ageing
The wine ages for 12 months in 25-year-old, truncated-shape Slavonian oak vats. It is racked at least three times before bottling. It is neither filtered nor fined and contains minimal sulfur. This low-intervention approach preserves its natural texture, rich flavour and sense of place.
Tasting profile
Lively and full of character, yet easy to drink. The nose has wet earth, freshly cut herbs, a little smoke and dark berries. The structure is good, with mineral notes and depth.

Suited to simple food at the table.
