About this wine
Vineyard and terroir
The grapes come from a 1.3 ha plot in Castelnuovo Baradenga, Tuscany. Planted in the late 1980s, the vineyard has limestone and clay soils and a density of 7,000 vines/ha. The dense planting naturally restricts yields, which are reduced further through timely pruning and shoot removal.
Vinification
The grapes are generally harvested by hand in mid-October and completely destemmed. Spontaneous alcoholic and malolactic fermentations take place in steel tanks. The wine is then gently pressed off the skins and bottled without fining or filtration.
Ageing
The wine remains on its lees for 12 months in 5–30 hl Slavonian oak barrels and Austrian oak botti, followed by at least six months in bottle before release.
Label / history
The name originally referred to a five-variety blend of Sangiovese, Colorino, Mammolo, Foglia Tonda and Ciliegiolo, although the wine is no longer made from all five. Giovanna also connects the name with the wine’s relatively early readiness to drink and the five fingers of a hand. Other associations include the vines’ five leaves and flowers per bunch, her home address at number 5, and the Italian school grading scale from one to ten, on which five is neither satisfactory nor entirely bad.
