About this wine
Vineyard and terroir
The grapes grow on a 3 ha plot near Castelnuovo Berardenga in Tuscany. The vines were planted in the late 1980s in limestone and clay soils, at a density of 7,000 vines/ha. Close planting limits yields naturally, with timely pruning and shoot removal reducing them further.
Grapes
Sangiovese forms the main part of the blend, supplemented by small amounts of Foglia Tonda, Mammolo, Colorino and Ciliegiolo.
Vinification
The grapes are usually harvested by hand in mid-October and completely destemmed. Spontaneous alcoholic and malolactic fermentations take place in open vats made from Slavonian and Austrian oak. The wine is then gently pressed to separate it from the skins and bottled without fining or filtration.
Ageing
The wine rests on its lees for 24 months in neutral 500 L barrels and large Slavonian and Austrian oak botti. It matures in bottle for at least another six months before release.
