About this wine
Vineyard and terroir
The vineyards are in Marche, at 180 m above sea level. They face northwest and have mixed soils composed mainly of clay.
Vinification
The grapes are harvested by hand in mid-October and placed in small crates with dry ice to prevent oxidation. After gentle crushing, the must remains in contact with the skins for several hours. Fermentation takes place in stainless-steel tanks at a controlled temperature of 15 °C.
Ageing
Most of the wine matures in stainless-steel tanks, while 20% is aged in small oak barrels.
Label / history
The name “Salmariano” refers to a castle built in the 1100s.
