About this wine
Vineyard and terroir
The fruit comes from organic and biodynamic vineyards in Colli della Toscana Centrale, at 350 metres above sea level. The soils are stony slate and limestone, and many vines are over 45 years old. Summers are warm, bright and sunny, while winters are cold and harsh.
Vinification
The grapes are harvested by hand at optimal ripeness. Natural fermentation and skin maceration take place in stainless-steel vats at a controlled temperature of 20–27 °C.
Ageing
The wine matures for 18 months in barriques and tonneaux, followed by at least three months in bottle.
