Vineyard and terroir
The grapes grow on deep clay and limestone soils in Salento.
Vinification
The grapes are harvested from late August to early September. Cold maceration lasts about 15 days at a controlled temperature, followed by malolactic fermentation.
Ageing
The wine ages in stainless-steel tanks.
