About this wine
Vineyard and terroir
The grapes come from organic vineyards with medium-textured soils made up mainly of clay. The Fondo Filara collection is grown organically in the Etna and Vittoria areas.
Vinification
Harvest is by hand in September. Winemaking begins with 12 hours of cold maceration, followed by gentle pressing and 48 hours of static settling. Fermentation lasts 20–25 days at a controlled temperature of 15–18 °C.
Ageing
The wine is aged on its fine lees in stainless steel tanks, then matures for a further 2–3 months after bottling.

Part of the Fondo Filara collection of single-varietal, origin-controlled wines, which are meant to reflect the purity of their terroirs and express each variety authentically.
