About this wine
Vineyard and terroir
The grapes come from organically farmed plots in Sicily’s Etna and Vittoria areas, at 200–250 metres above sea level. The soils are sandy, and the climate is hot and sunny.
Grapes
The wine is made from selected Syrah grapes.
Vinification
The grapes are harvested by hand in September. They undergo 10–15 days of maceration, followed by 10–15 days of fermentation at a controlled temperature of 24–26 °C.
Ageing
The wine is initially kept in stainless-steel tanks, then aged for 5–6 months in oak barriques and for at least four months in bottle.
