End of the 2016 Harvest on Mt. Etna

Snow had fallen across roughly two-thirds of the mountain by the close of the 2016 harvest. The young wines darkened quickly while remaining relatively low in sugar. Their character became apparent only after three or four days of fermentation. The fruit had ripened fully enough for flavour and colour to release without forceful extraction, leading to an expectation of smooth, gentle wines that would reflect the unfamiliar character of the year.
