About this wine
Vineyard and terroir
The Fiano Minutolo grows in an 8 ha vineyard near the Adriatic Sea in northern Puglia. The site is farmed using organic and biodynamic methods, with white clay, red clay, sand and loam soils.
Grapes
The wine is made from the Fiano Minutolo selection.
Vinification
The grapes undergo traditional vinification.
Ageing
The wine ages for six months in stainless-steel tanks.
Tasting profile
Layered, rich and complex, with depth and a broad spectrum of fruit and floral notes. Aromas and flavours include lychee, green grapes, lemon, banana, pineapple, and white and yellow flowers, complemented by subtle saline mineral hints.
Serving and pairing
Pair with herb-flavoured cheeses, fish soup, smoked salmon, asparagus and shrimp risotto, gnocchi with Taleggio, sushi, fig and almond tart, or marzipan.
