Vineyard and terroir
The vineyards lie at 500 m above sea level and experience marked differences between daytime and nighttime temperatures. Their rocky soils are rich in calcium and magnesium carbonates, contributing mineral character and freshness.
Vinification
After harvest, the grapes undergo a brief cold maceration and gentle pressing. Fermentation takes place in stainless-steel tanks at a controlled temperature.
Ageing
The wine rests for five months before bottling.
