About this wine
Vineyard and terroir
The Grillo grows on 9 ha in Contrada Samperi, Marsala. The level ground consists of medium-textured, limestone-rich sandy loam. Vines are more than 20 years old, single-Guyot trained at 3,500 plants per hectare, and yield 60 q/ha. The vineyard receives no chemical fertiliser or herbicide; plant-protection treatments are sharply reduced and use minimal copper and sulphur.
Grapes
100% Grillo. The INTEGER name derives from the Latin for “whole” or “intact” and expresses the aim of presenting an indigenous variety and its territory with limited intervention.
Vinification
The grapes are manually selected, harvested into small crates from the first week of September and transported only a short distance to the cellar. They are destemmed and gently crushed. A small portion ferments spontaneously with indigenous yeasts in used open barrels, on the skins for about ten days, without pumping over or punching down. The remaining must ferments in open terracotta amphorae and continues macerating on its skins for several months. Fermentation proceeds without direct temperature control, and both alcoholic and malolactic fermentations are completed.
Ageing
After racking, the wine matures on its fine lees in the same barrels and amphorae for approximately one year, with a stated minimum of ten months. It reaches clarity through natural sedimentation and is bottled without filtration, stabilisation, refrigeration, correction or added sulphur dioxide.
