About this wine
Vineyard and terroir
The Grillo comes from a 0.5 ha vineyard in Contrada Samperi in western Sicily. The 22-year-old vines stand on level, medium-textured calcareous-sandy soil and are trained on Guyot trellises at a density of 3,500 vines per hectare. Yield is 35 hl/ha.
Grapes
100% Grillo.
Vinification
The grapes are harvested manually from 20 August through the end of September. Fermentation is carried out by indigenous yeasts in 500 l barrels, and the wine remains on its lees for 12 months. The tirage combines Grillo wines from different vintages with fresh must made from the latest Grillo harvest and a small addition of Vecchio Samperi. Refined sugar is not used for the secondary fermentation.
Ageing
Thirty months on the lees after tirage.
Technical data
Alcohol: 13.5% vol. Total acidity: 7 g/l. pH: 3.0. Residual sugar: 8 g/l. Total SO₂: 8 mg/l. Production is 3,000 bottles.
Tasting profile
A dry, mineral expression of Grillo whose added Vecchio Samperi contributes depth and links the fresh sparkling-wine style to the estate’s mature perpetual wine tradition.
Label / history
First produced in 2010, Terzavia Cuvée VS began as a wine conceived for sharing among friends and developed into one of the cellar’s emblematic bottlings. Its name presents a “third way”: a meeting between the French tradition of bottle-fermented sparkling wine and a distinctly Sicilian interpretation based on Grillo. The blend of multiple Grillo vintages, fresh must and Vecchio Samperi connects past and present.
