About this wine
Vineyard and terroir
The 2024 wine comes from 1.43 ha at San Fabiano, at 250 m above sea level with southwest exposure. Average yield is approximately 51 quintals per hectare (5.1 t/ha).
Grapes
50% Chardonnay and 50% Sauvignon Blanc.
Vinification
The grapes are harvested on 2 September and carefully selected in the vineyard, followed by further sorting in the cellar. After crushing, the fruit undergoes cold maceration at 3 °C for 12–24 hours. The crushed grapes are gently pressed at 0.5 atm, and the must is clarified statically at approximately 0 °C for 2–3 days. Fermentation begins with selected yeasts and proceeds in stainless-steel tanks at a controlled 14 °C for approximately 25 days.
Ageing
The wine remains on its lees in stainless-steel tanks for approximately 8–10 months.
Technical data
Alcohol is 12.50%, total acidity 6.16 g/L, net extract 19.95 g/L and residual sugar below 1 g/L. Production is 1,500 bottles in a 0.75 L format.
Tasting profile
Light, bright straw yellow with subtle golden nuances and greenish reflections. Varietal aromas combine ripe white fruit and tropical fruit with vegetal notes and a distinctly mineral finish. The palate is savoury, fresh and well structured, ending soft and pleasant. It is suited to youthful drinking but can also undergo a short period of ageing.
Serving and pairing
Pair with substantial seafood dishes such as seafood risotto and roast fish, as well as white meat, medium-aged cheeses and blue cheeses. It also works as an aperitif or can be enjoyed on its own.
