About this wine
Vineyard and terroir
The vineyards lie in the hills of northern Taranto province in Salento, Puglia, at approximately 100 metres above sea level. Pronounced differences between daytime and nighttime temperatures characterize the area. Espalier-trained vines are planted at 4,000 plants per hectare on shallow, medium-textured clay soil with a substantial stony component.
Grapes
100% Fiano. The variety originated in nearby Campania, and its presence in Puglia has been documented since the thirteenth century.
Vinification
Harvest takes place during the last week of August. After destemming and gentle pressing, the must undergoes cold static settling. Alcoholic fermentation proceeds in stainless-steel tanks at 14°C.
Ageing
Maturation takes place in stainless-steel tanks.
Technical data
The 2025 shop release has 12.5% alcohol by volume.
Tasting profile
Light straw yellow with bright green reflections. Fragrant floral notes mingle with fresh tropical fruit. The palate is distinctly soft yet lively, supported by harmonious savouriness and firm acidity.
Serving and pairing
Serve at 10–12°C with mixed seafood starters, raw shellfish and first courses dressed with light pink fish sauces. Best enjoyed within two years of harvest.
Label / history
Talò, a surname common among local growers, collectively honours the San Marzano farming families who tend their vineyards like gardens. The range brings together several varietal wines as an emblem of the community.
