About this wine
Vineyard and terroir
Volpolo is made from a selection of grapes grown in vineyards distinct from those supplying SAPAIO. The vines use a double-cordon training system and a 0.75 × 1.80 m planting layout, corresponding to 7,500 vines per hectare.
Grapes
The 2015 blend is 70% Cabernet Sauvignon, 15% Merlot and 15% Petit Verdot.
Vinification
The grapes are picked by hand and selected. Alcoholic fermentation takes place at controlled temperature in stainless-steel tanks with a long maceration on the skins. Malolactic fermentation occurs in French oak.
Ageing
The 2015 vintage matured for 16 months in French-oak barriques and tonneaux, followed by four months in bottle. The general description gives 14 months in barriques and six months in bottle.
Technical data
The 2015 wine has 14.5% alcohol by volume. Production was 108,000 bottles, with release in spring 2017.
Label / history
The first release, in 2003, was Toscana IGT. From the 2004 vintage onward, Volpolo has been classified as Bolgheri Rosso DOC. Its name derives from Volpola, an old Tuscan grape variety chosen to emphasize the wine’s local origins.
