About this wine
Grapes
Sagrantino is a rare native variety with an exceptionally high level of antioxidant polyphenols.
Vinification
Harvest takes place in the second half of October, from the 15th to the end of the month. Fermentation is in 100-hectolitre oak vats for 3 to 4 weeks at a controlled temperature below 30 °C.
Ageing
The wine ages for at least 18 months in barrels and large French oak vats, then for a minimum of 4 further months in bottle in the estate's cellars. This last stage softens the tannins and brings the structure into balance. Cellaring for up to 10 years is recommended so that the character can develop fully.
Tasting profile
Rich, enveloping structure, even when young, with an expressive mix of fruit and oak aromas.
Serving and pairing
Pairs especially well with game, mature piquant cheeses and juicy grilled meat.
