About this wine
Vineyard and terroir
The Syrah grows on low-yielding, 40-year-old vines in the volcanic soils of Pantelleria. The vineyards are tended entirely by hand and with horses, without machinery.
Vinification
The grapes are harvested by hand and lightly pressed. Fermentation occurs spontaneously with natural yeasts in Spanish terracotta amphorae buried underground. The wine is bottled without filtration or fining, with no added sulfites.
Ageing
The wine ages for seven months in the same buried terracotta amphorae used for fermentation.

Label / history
Production is limited to 600 bottles each year.
