About this wine

Vineyard and terroir

The vineyards lie at the foot of the Etna volcano in Sicily. The grapes are from rare varieties and give the wine freshness, layered flavours and minerality.

Vinification

The grapes are harvested in mid-October. Fermentation is spontaneous, at 25–28 °C, followed by a short maceration of 8 days. Malolactic fermentation follows.

Ageing

After malolactic fermentation the wine is aged partly in stainless steel tanks and partly in oak barrels. It is bottled without filtration.

Tasting profile

Inviting aroma. Fresh fruit is balanced by refined minerality. The finish is lightly tannic.

Serving and pairing

Suited to a relaxed lunch or dinner with friends, and to barbecue or shashlik.

Vintage notes

The 2018 vintage was released in a limited run of 3,000 bottles.
