About this wine
Vineyard and terroir
The 1.9 ha Tornidora vineyard lies in the hills of the commune of Fumane, in the heart of the Valpolicella Classico wine region. It sits at 500 m above sea level on clay and limestone soils, with a south-eastern exposure that provides ample sunlight. The vines were planted in 2002.
Vinification
The grapes are harvested entirely by hand at optimal ripeness, then selected, pressed and destemmed. Maceration and fermentation take place over 12 days in steel tanks at a controlled temperature of 25–28 °C, with regular manual punch-downs. In February, the wine undergoes a 15-day secondary fermentation at 15 °C on grape-skin pomace from Amarone production, with daily pump-overs. Malolactic fermentation takes place in French oak barrels. The wine is bottled without filtration.
Ageing
The wine matures for 12 months in French oak barrels, followed by at least six months in the winery’s cellars after bottling. Recommended storage conditions are 14–15 °C with appropriate humidity.
Tasting profile
The wine is refined, with a rich yet soft palate.
