About this wine

Vineyard and terroir

The fruit comes from the winery-owned Camparol vineyard on the hills of Fumane near Cavalo. The site has a south-eastern exposure and stands at 600 metres above sea level.

Vinification

The grapes are harvested by hand at the end of September and placed in 15–20 kg crates. They dry for around 120 days, until the end of January, in specially equipped, well-ventilated rooms known as fruttai, losing up to 40% of their moisture. The bunches are pressed without destemming. Alcoholic fermentation takes place in stainless-steel tanks at a controlled 12–23 °C, followed by 35 days of extended skin contact for greater concentration. The wine is bottled without filtration.

Ageing

The wine matures for 24 months in new French oak barriques, followed by a further eight months in bottle.
