About this wine

Vineyard and terroir

Vigna L’Aja Bruciata is produced exclusively from grapes grown at Tenuta Casa Maria in the Province of Grosseto. The 5.47-hectare L’Aja Bruciata vineyard was planted in 2008 at 135–150 metres above sea level, with 6,060 vines per hectare. Its north-northwest exposure and sandy quartzite soil—with a sandy-loam texture and a tendency toward sub-acidity—define the site.

Grapes

100% Vermentino. The wine grew out of Andrea Zingarelli’s project to explore the full potential of Vermentino cultivated in Maremma and represents Rocca delle Macìe’s highest expression of white wine.

Vinification

The grapes are harvested by hand and selected in the vineyard. Dry ice is added directly among the vines to protect the fruit. After destemming, the grapes are pressed without oxygen. Fermentation takes place in stainless steel under controlled temperature and lasts approximately 10 days.

Ageing

The wine matures on its lees in concrete tanks for at least nine months, with frequent bâtonnage. After bottling, it rests for a further minimum of eight months before release.

Tasting profile

Pale straw yellow with greenish highlights. The bouquet presents fine varietal aromas with floral and fruity notes. The palate is savoury, rounded and elegant, combining aromatic freshness with harmony and a persistent, rhythmically developing finish.

Serving and pairing

Serve at 8–10 °C with fish preparations, white meats or vegetables.
