About this wine

Vineyard and terroir

The vineyards lie in the Chianti region. The soils are well-structured clay with plenty of limestone.

Grapes

Sangiovese is blended with Canaiolo Nero and Ciliegiolo. The text gives no proportions.

Vinification

The grapes are picked by hand. The growers monitor each vine continuously to choose the harvest time. At the winery the grapes are sorted, and only healthy, undamaged berries go to vinification. Fermentation follows the "Ganimede" method.

Tasting profile

Elegant, with a soft, velvety taste. The Ganimede fermentation is said to bring out the distinctive character of the Chianti terroir.

Serving and pairing

Pairs with roast meat, pâtés and full-flavoured cheeses.
