Vineyard and terroir
The vineyards lie in northeastern Basilicata at 350–400 metres above sea level. The vines are 8–15 years old, and the terroir and vine age contribute distinctive aromas and flavours to the fruit.
Vinification
The grapes are harvested by hand at optimal ripeness, usually between 5 and 20 September. Picking takes place early in the morning to preserve freshness, and the fruit is transported immediately to the winery. After crushing and destemming, the grapes are pressed without delay. The must ferments with selected yeasts in stainless-steel tanks at a controlled 15–18 °C. The wine is then filtered and bottled cold.
