About this wine
Grapes
Chardonnay and Pinot Nero.
Vinification
The grapes are picked early by hand to retain acidity. The first fermentation takes place in stainless-steel tanks, followed by tirage and a second fermentation in bottle. Malolactic fermentation is partial.
Ageing
The sparkling wine matures for at least 36 months on its lees in bottle and receives a further 6 months of bottle ageing after disgorgement.
Technical data
Alcohol: 12.5% vol. Total acidity: 6.5 g/L. Residual sugar: 6 g/L, corresponding to Brut. Total SO₂: 85 mg/L. pH: 3.15. Available in 0.75 L and 1.5 L Magnum bottles.
Tasting profile
Straw yellow with a fine, persistent perlage. Aromas of bread crust, candied citrus and white flowers are accompanied by light yeast and hazelnut notes. The palate is elegant and creamy, with pronounced freshness and very fine bubbles. The finish is exceptionally long and savory, recalling almond and citrus.
Serving and pairing
Serve at 6–8 °C in a sparkling-wine tulip rather than a flute; decanting is unnecessary. Suitable for an important aperitif, oysters, shellfish or throughout a fish-based meal. Ageing potential is 5–8 years.
