About this wine
Vineyard and terroir
The fruit comes from the company’s vineyards. The soils are rich, mainly limestone with volcanic deposits, and the vines average 15–25 years old.
Vinification
The grapes are harvested by hand, destemmed and gently pressed with a pneumatic press at the winery. Fermentation takes place at a controlled temperature of 12–23 °C, with mixing at least three times a day, followed by malolactic fermentation. The wine is filtered twice before bottling.
