It comes from the same volcanic slopes of the Alban Hills south-east of Rome — some 8,300 hectares first delimited in 1933 — where the soils are built of ash and lapilli from the Latium Volcano, whose last eruptions came between 29,000 and 25,000 years ago, and where craters now hold the lakes of Albano and Nemi. Cannellino di Frascati in breve
The grapes are the Frascati blend: at least 70 per cent Malvasia Bianca di Candia or Malvasia del Lazio, with Bellone, Bombino Bianco, Greco Bianco and the Trebbianos. For Cannellino they must be picked late, and they may be partly dried indoors. The finished wine keeps at least 35 grams of residual sugar a litre.
The style follows an old local habit. Growers once picked their vineyards in three passes, and the last grapes, overripe and in favourable years touched by noble rot, were gathered on purpose for richer, sweeter wine sought after by Rome's innkeepers; sometimes the fruiting cane was cut on the vine to speed the drying. The producers' consortium was founded on 23 May 1949 by eighteen growers. Cannellino di Frascati became a DOCG in 2011.
