Vineyard and terroir
The organically farmed vineyards are located at Vittoria in south-eastern Sicily, at 230 m above sea level. The vines are Guyot-trained at a density of 5,000 plants per hectare and have an average age of 25 years. Medium-textured red soils derive from sub-Apennine sands of Pliocene origin.
Grapes
100% Frappato di Vittoria.
Vinification
Harvest takes place in early September. The grapes are pressed directly, and the must undergoes spontaneous fermentation in terracotta amphorae with indigenous yeasts.
Ageing
The base wine matures in concrete. Bottling for the second fermentation uses fresh must from the following vintage, without added sugar or yeast. The wine remains on its lees for 20 months and is released at zero dosage.
