Vineyard and terroir
The Grillo grapes are grown organically in Sicily.
Vinification
The grapes are selected at optimal ripeness. Spontaneous fermentation and whole-bunch maceration take place in stainless-steel tanks over six months, with biodynamic methods used during winemaking. The wine is bottled unfiltered, without added sulfites.
Ageing
The wine spends a further six months in the same stainless-steel tanks.
