Storia
Winemaking had already been part of Aldo Viola's family for decades, with traditions and knowledge passed down through four generations. Young and ambitious, Aldo first gained knowledge and experience in Europe before returning home, determined to make ideal local wines using traditional methods.
Terroir
The Valdo family's vineyards are located in Trapani, a well-known wine region in Sicily, covering around 16 ha.
Vinificazione
Each variety is grown with environmental sustainability in mind, and the vineyards follow organic farming standards.
Fermentation uses native yeasts, while malolactic fermentation occurs naturally. Sulfites are used only sparingly, and the wines are bottled without filtration to preserve their natural character. Aldo Viola produces a small, niche range of just over 10,000 bottles each year.
Filosofia
Aldo Viola describes its approach as guided by three principles: "excellence," "tradition," and "environmental purity." The winery is sometimes described as a "one-man winery," reflecting the central role of Aldo Viola himself.
