Vineyard and terroir

The Chardonnay grows in the Castello della Sala vineyards in Umbria. The soils contain marine fossil deposits and clay, which give the wine an expressive character and refined minerality.

Vinification

After harvest the grapes are gently destemmed and briefly macerated at low temperature to bring out more of their aroma. Once the must is clarified, it ferments partly in oak barrels and partly in stainless steel tanks at a controlled 16–18 °C. Only the portion aged in oak undergoes malolactic fermentation, which gives a fuller texture and delicate creamy notes while keeping the fruit clean and fresh.

Ageing

Part of the wine is aged in oak; the text gives no vessel sizes or durations.

Tasting profile

Elegant, with a rounded texture that combines fresh fruit, delicate minerality and soft creamy notes. The nose brings together yellow apple, gorse blossom, citrus fruit and nuts. On the palate juicy fruit is balanced by lively acidity, followed by subtle salty, mineral notes. A touch of salted almond expresses the wine's Umbrian character. The style is fresh and refined. With time it gains complexity while keeping its signature freshness and elegance.

Serving and pairing

The text suggests a summer dinner outdoors.

Vintage notes

2025: a mild winter gave the vines a good period of dormancy. Spring had normal temperatures and rainfall, leading to even budbreak. Summer was warm without extremes, and rain in the first half of August helped balanced ripening. The Chardonnay harvest for this wine began around mid-August and continued until the first week of September.

Label / history

The Antinori family's winemaking history dates back to the XVI century, and the 26th generation now continues it. The family owns extensive vineyards in Umbria and Tuscany.
