Vineyard and terroir
The vineyards surround Castello della Sala, a castle near Orvieto at around 500 metres above sea level; the castle is 18 km from Orvieto. Marked differences between daytime and nighttime temperatures help the grapes keep their freshness and aromatic intensity. The area's cool microclimate suits white wines, and volcanic soils together with a distinctive microclimate give good conditions for viticulture. The Orvieto Classico zone covers the land around the volcanic tuff rock on which the city of Orvieto stands.
Grapes
Native Grechetto and Procanico (Trebbiano Toscano) form the base, complemented by Pinot Bianco and Viognier.
Vinification
Each variety is vinified separately. Part of the must undergoes cold maceration at 10 °C for about 6 hours to extract aroma and texture from the skins while preserving purity and freshness. Fermentation takes place in stainless-steel tanks at 16 °C, which keeps the fruit bright without sacrificing acidity.
Ageing
Several months on the fine lees add structure, silkiness and minerality.
Tasting profile
Refined, mineral and well balanced. It feels both light and full: acidity is lively, while the wine becomes rounder and more textured through its time on the lees.
Label / history
Produced since 1990, the year of the first harvest from the Castello della Sala vineyards. Antinori's winemakers present it as an accessible introduction to the Castello della Sala style. Castello della Sala is an example of medieval military architecture. Orvieto received DOC status in 1971, and since 1997 Orvieto Classico DOC wines may use the Superiore designation.
