Vineyard and terroir

The Sauvignon Blanc and Sémillon grapes are carefully selected and grown at 250 to 350 metres above sea level. The soils are rich in marine fossils, with deposits of clay minerals. This terroir helps the Sauvignon Blanc develop good sugar concentration and fully express its varietal aromas and flavours, with mineral and fruit notes.

Grapes

The blend combines fresh, lightly aromatic Sauvignon Blanc with soft, tropical Sémillon, so that the two varieties complement each other.

Vinification

The grapes are harvested by hand, taken straight to the cellar and chilled before pressing to preserve their varietal aromas. Each variety is vinified separately. After gentle pressing, the must is held at 10 °C for several hours to clarify naturally. It is then transferred to stainless steel tanks and fermented at no more than 16 °C. Once fermentation is complete, the wine is kept at around 10 °C to prevent malolactic fermentation and preserve its sensory profile. The two batches are then blended.

Vintage notes

2024 in Umbria was a calm, steady growing season. The winter was mild, and the spring was cool with moderate rainfall. Temperatures were neither too low nor too high, which helped the grapes balance acidity and sugar, while the rain gave the soil enough moisture for normal growth. Summer was stable and warm without becoming hot. Harvest began in late August and finished in mid-September, and the grapes had rich, layered aromas.

Label / history

The name comes from the first owners of Castello della Sala. The label shows the Chapel of Saint John, built in the 13th century and located on the Castello della Sala estate. The wine was first released in 1997.
